“Raspberry” Surprise Jam

5 cups peeled, chopped fresh tomatoes (I have used red and yellow tomatoes-mixed)
4 cups sugar
1 Tablespoon lemon juice
2-3 ounce size or 1-6ounce size raspberry gelatin

In a large saucepan, combine tomatoes with sugar and lemon juice.  Bring mixture to a boil stirring often, reduce heat and simmer uncovered for 25 minutes.  Remove from heat-skim off any foam if necessary. Stir in gelatin till dissolved.

Fill small canning jars.  Process in a boiling water bath 10 minutes.  Let set 24 hours before using to set OR option 2 is to fill freezer containers-let set 24 hours before freezing.  Thaw before using.
